The high quality of many of the Hautes-Côtes wines produced in this area is in no small measure due to the work of Lucien Jacob, Jean-Michel's father. He was instrumental in re-establishing the vineyard in this part of the Côte d'Or, and the legacy of his experiments with different clones of Pinot Noir vines can still be seen in one part of the vineyard. This wine is slightly lighter, and earlier maturing than the Savigny, yet displays the same lingering wild strawberry flavour of its more famous cousin.

The Pinot Noir grapes for the Savigny-lès-Beaune are all hand picked, and the wine is aged for 18 months in year-old oak barrels, which adds to its complexity without dominating the flavour. This wine is characterised by elegant strawberry fruit and an attractive earthiness, very typical of this area. It has good structure and smooth tannins, which help it develop into a soft, full-flavoured burgundy after about five years.
