Sancerre Cuvée Caillottes
The part of the Sancerre appellation called Les Caillottes is situated between the town of Sancerre and the village of Verdigny. The terrain is characterised by small hills and stony slopes where the soil contains a higher proportion of limestone. Pierre has a small patch of old vines in this prestigious part of the appellation, and starting with the 1995 vintage, he has vinified a unique cuvée just for us.
The grape that produces our exclusive Sancerre is, of course, the Sauvignon Blanc. It is vinified in stainless steel tanks with temperature regulation. The resulting wine is crisp, with a powerful bouquet, slightly more grassy than fruity, and with a concentrated fruit flavour and a long, complex aftertaste. It is a unique example of the appellation.
Having asked Pierre which foods to match with the Cuvée Caillottes, he replied with one of those immortal French phrases that so often apply to food and wine, and which, perhaps, would lose something in the translation: "Il peut accompagner tous les grands moments de la gastronomie."
