Domaine de Salvert 2007 Tasting Notes

Anjou rouge Les Noëlles 2006
Anjou blanc Cuvée 1895 2006

Our two wines this year are from the 2006 vintage. After a very hot and dry July came a cooler and wet August, which led then into a fine warm September.  As a consequence the grapes were harvested in mid September in good condition, especially the whites which were picked first.  At the end of September when more rain arrived the remaining red grapes had to be harvested very quickly indeed!

Our exclusive red Anjou Les Noëlles 2006 is a unique blend of 60% Cabernet Franc and 40% Cabernet Sauvignon.  The two Cabernets bring lovely aromas of raspberry and blackcurrant, leading to a medium-bodied and fruity taste, with soft, well-balanced tannins.  Wines made from the Cabernet grapes can sometimes be quite harsh when young, but to ensure relatively softer tannins in our wine Georges cut short the maceration time at fermentation.  It is a very versatile wine; when young it goes extremely well with cold meats, pâtés and pasta in rich tomato-based sauces, but with three to five years of bottle age it will accompany roast chicken, roast pork and some mild cheeses.

Our exclusive white Anjou Cuvée 1895 2006 is made from 100% Chenin Blanc.  It has a lovely balance and a rich, long-lasting flavour, with a nose and taste of citrus and quince merging with apples. Dry, crisp and fresh, it is also a versatile wine, and is great simply on its own as an aperitif or as a partner to cold meats (especially ham), crudités, plain grilled fish, poultry or pork.  We would recommend that you drink it young, or within three years of the vintage.
