Champagne Cuvée de Réserve
Our Cuvée de Réserve is a blend of the three classic champagne grape varieties – Chardonnay, Pinot Noir and Pinot Meunier. On the nose aromas of acacia and even of anise and quince jelly emerge. It is a champagne with a balanced roundness and a certain power, yet with a freshness on the palate. Although the legal requirement is for champagne to mature on its lees for a minimum of 15 months, Alain then insists on keeping his Cuvée de Réserve slowly maturing in his cellar for a full three years. The result is greater depth of flavour, persistence of delicate fizz and a complexity of sensations which lingers on the palate long after each sip is savoured.
The secret of good champagne is consistency and every bottle of this lovingly prepared cuvée expresses all that is conjured up by the mere mention of the word ‘champagne’ – fun, vivacity, relaxation and joy. It makes a perfect aperitif but you can also drink it as an accompaniment to a wide variety of food such as pork, ham, chicken, guinea fowl, pheasant, sanglier (wild boar) and fish. All dishes are perfectly matched by this delectable mate. Try trout fried in butter with a ham and crème fraîche sauce or pike with bacon and gherkins – delicious!
