Chablis Premier Cru Fourchaume 2004

The 2004 vintage represented a return to normality after the excessive heat of 2003. Both wines - our exclusive Chablis Vieilles Vignes and the Premier Cru Fourchaume - are quite different in style to last year’s vintage. 2004 was a cooler year and the wines are more restrained with better acidity to complement the underlying minerality, which is so typical of this wine. Despite being one of our younger winemakers, Jean-François Bordet adheres to the classic methods of the region and produces his wine in stainless steel tanks in order to emphasise the freshness and purity of the fruit.

The Premier Cru Fourchaume is more delicate than last year, with soft peach flavours balanced by fresh lime acidity and a delightful minerality. This is an exceptional Chablis which will age well over the next six or more years, when it will develop a complex nutty character. You may wish to lay this vintage down for at least a further year whilst you enjoy the 2003 wines now.

Chablis, with its high acidity levels, works excellently with rich or oily dishes, such as smoked salmon, avocado or fish in creamy sauces - it is also a superb accompaniment to the salty, mineral tang of oysters.

The Vieilles Vignes 2004 is rich and concentrated, courtesy of the low-yielding vines, but again it has the mineral crispness of a typical Chablis. Like the Fourchaume, this will continue to develop complexity over the next six years, and can be used with much the same foods - however it also works extremely well with simple roasted poultry dishes or white meat.
