Spring 2008: Pierre Baur, who has already undergone the rigorous programme for certification in biodynamic viticulture, is a glutton for punishment. He has now gone the extra mile and been certified under HACCP, a total quality control programme. This covers complete traceability from the soil and parcel of land to each individual bottle, and includes notation of all the different methods of viticulture and vinification used for all of his wines. The programme also covers the commercial aspects of running a vineyard, and a commitment to the environment through certified recycling of all waste products. Pierre says they are one of only six vineyards in Alsace to take on the programme, which involves rigorous training over three years and a considerable investment on their part.
