Champagne Brut Origine NV
Being predominantly Pinot based from one Premier Cru-rated village,Pierre’s champagnes have richness and power as well as a distinct minerality.
The Brut Origine is made up of 90% Pinots Noir and Meunier with the balance being Chardonnay. It has had three years ageing on the lees, which is longer than most non-vintage champagnes. This extended ageing in the very deep, cool cellars, gives the Brut Origine a lovely biscuity richness as well as a soft, creamy mousse from the very fine bubbles that result. With deliberately low dosage (addition of sugar), this non-vintage is crisp and dry on the palate with delicious citrus fruit flavours together with acacia and a distinct chalkiness. The mousse is very gentle, creamy and mouth-filling and the finish is long, mineral and finely textured. As well as being a great aperitif, champagne goes well with many foods – subtle, savoury dishes being the best. I recommend you try it with pâté en croûte, fresh oysters with a squeeze of lime and pepper or sushi. Drink over the next two to three years.
