Chablis Vieilles Vignes
During our first visit to Domaine Séguinot-Bordet Jean-François had mentioned the possibility of an exclusive Chablis Vieilles Vignes, produced from the Chardonnay grapes grown in the small vineyard his grandfather Roger had planted in the 1930's. Having tasted the resulting wine, we were more than happy to agree!
Old vines always add complexity to a wine's flavour and when combined with a period of ageing on the lees, the result is a rich, complex wine with a delightful floral bouquet, a spicy palate with lots of ripe fruit, and a lovely creamy texture. It is racked off its lees in the spring following the harvest, bottled during the summer, and then after a year's maturation in bottle it is ready to drink straight away, though it will also age well for at least three or four years.
