The village of Gevrey-Chambertin is located between Dijon and Beaune at the entrance to the Combe de Lavaut, a narrow valley that plays an important part in the renown of Gevrey's wines. The Jacobs have three small parcels of vines in Gevrey-Chambertin, the most prestigious of which is just below the famous Premier Cru vineyards of Les Cazetiers and Le Clos Saint-Jacques on the northern side of the Combe de Lavaut. It is called En Songe, which means 'in a dream' - and we certainly hope you will be after sampling our exclusive wine.
The tiny Pinot Noir vineyard is only 0.25 of a hectare in size so our exclusive cuvée also contains grapes grown in another parcel of vines called La Justice. Yields are restricted to a maximum of 48 hectolitres per hectare and it is, potentially, the best wine the Jacobs can make from their holding in Gevrey. The wine is matured in oak barrels, 50% of which are new each year. The temptation to age 100% in new oak was resisted, as our quest is to produce a wine that balances the power and intensity of the Côte de Nuits with the finesse of the Côte de Beaune. We hope you will agree that we have succeeded.
The wine is a brilliant ruby in colour with a bouquet of red and black fruits and a touch of spice. To taste it has deep blackberry and cherry fruit with a rich, silky texture and restrained power, the hallmark of a good Gevrey-Chambertin.

The white Hautes Côtes de Beaune Les Larrets is an oak-aged Chardonnay of which Jean-Michel is particularly proud. A period of ageing on the lees gives it a creaminess that is quite beguiling. It is made exclusively from grapes grown in the Les Larrets vineyard near Échevronne, which Jean-Michel planted in 1992. It has come to be known as the 'pigs' wine' as the vineyard is regularly visited by wild boar who seem to have developed a taste for it!
