Hautes Côtes de Beaune blanc

To complement our exclusive red Maranges we have an exclusive white Hautes Côtes de Beaune made from the Chardonnay grapes immediately behind the house. This wine is aged for nine months in oak barrels from the Allier forest in central France and the lees are stirred once a week. This process is called battonage and helps add roundness and complexity to the wine as it takes up some of the yeasty flavours from the lees. The wine has a sweet and spicy bouquet of vanilla and cloves giving way on the palate to lovely lime and grapefruit flavours with tingling, mouth-watering acidity.

Maranges rouge Le Bois de Clémentine

Our exclusive Maranges is called Le Bois de Clémentine and is made from Pinot Noir vines situated in a spot called Sur le Bois (in the wood). These vines were sold to the Chevrots some years ago by a charming old lady - whose name was Clémentine. The grapes grown here are vinified separately and the wine is bottled after 16 months of ageing in oak barrels, 40% of which are new. Our very first vintage - 1996 - was awarded a Silver Medal at the 1998 International Wine Challenge in London.

The young wine is deep red with a very 'up front' bouquet - slightly woody at first, then vanilla, then red fruits. It has a complex, well-balanced red fruit flavour with an elegant 'oaky' dimension at the end. This is top-quality burgundy which allies the finesse of red fruit flavours with new oak. It is deliciously fruity when young but with the benefit of four or five years' bottle age it starts to exhibit all the classic undergrowthy flavours so typical of good red burgundy.
