Chablis Côte de l'Étang

XCHAL-05.jpgChablis is a steely, dry white wine and, like all fine white burgundy, made from Chardonnay grapes. Chablis is probably the most famous white wine of all, respected and imitated all over the world. But only here, in Chablis itself, on the tongues of sub-soil geologists call Kimmeridgian Clay, can it be called Chablis.

Our Chablis vineyard is called Côte de l'Étang and is situated on a southwest-facing slope between Chablis and Courgis. It is just under 1 acre in size and was planted in 1989. The grapes have been harvested since 1992, but for the first three years they were added to grapes from other areas to produce a generic Chablis. However, on October 5th 1995, Côte de l'Étang was harvested by hand especially for us, and the grapes were vinified separately for the very first time.

Our exclusive Chablis has a clean, elegant bouquet, and a fine concentration of green fruit on the palate which, allied to a delicious minerality, gives a wonderful fullness of flavour and great refinement. As well as being the classic wine to partner smoked salmon, with a few years' bottle age, this wine develops a richer, creamier flavour and texture, making the older vintages a good match for fish and white meat dishes prepared in a creamy sauce.
